We use the NOVA classification to identify ultra-processed foods. NOVA is a food-classification system based on four levels of processing, from minimally processed to ultra-processed foods.
It is important to note that NOVA does not distinguish between healthy and less healthy processed foods. For example, whole-grain-containing commercial breads and ready-to-eat breakfast cereals are considered ultra processed within NOVA, despite being considered core foods in the many dietary guidelines.
