The reason is that these foods have a relatively high amount of sodium per 100 calories. In the app, sodium is listed under the 'blood fat response' subcategory because research has linked excess sodium intake to an increased risk of cardiovascular disease, which affects heart health.
However, it's important to put this into perspective. To eat 100 calories of spinach or celery, you'd need to eat an enormous amount – over half a kilogram of spinach, for example! Far more than a typical serving.
In reality, it's unlikely that the blood fat response would be poor for a normal portion of these vegetables. So, please feel free to continue enjoying these nutritious foods. Don't worry too much about the blood fat response shown for these items in the app.
Remember, the overall food score in the ZOE app gives a much more complete picture of a food's nutritional value. These vegetables offer numerous health benefits that far outweigh any concerns about their sodium content when eaten in normal portions.
